    Breakfast Pizza by Gary Duke at Alley Oops Pizza dough- I use the store bought that is sold in the biscuit section. 1 cup marinara sauce 1 cup mozzarella cheese, grated 1 cup mushrooms, thinly sliced 1/2

Serves 4
Prep time: 15 minutes

Ingredients:

6 pita breads
1/2 cup spaghetti or pizza sauce
2 cups zucchini, chopped
1 small brown onion, chopped
1 bell pepper (any color), chopped
3 medium tomatoes, chopped
1 4 oz. can sliced olives
1/2 tsp. salt
1/4 tsp. dried basil leaves
1 cup mozzarella cheese, shredded

Directions:

  1. Preheat oven to 350 degrees.
  2. Place pita bread on ungreased baking sheet.
  3. Spread 2 tablespoons sauce on each pita bread.
  4. In a separate bowl, mix zucchini, onion, peppers, tomatoes, olives, salt and basil.
  5. Spoon vegetables on pita bread.
  6. Sprinkle with shredded cheese.
  7. Bake for about 8 minutes or until cheese is melted.
