Total Time: 20 min

2 lb. Ground Beef
2 Beef boullion cubes
1 Onion
1 12oz. Can tomatoes
1 Package Tortillas (flour or corn)
1 Package shredded cheese (cheddar or Mexican blend)
1 Can Enchilada sauce

Garnishes (optional)
-Sour cream
-Diced tomato
-Sliced black olives
-Chopped lettuce
-Guacomole
-Salsa
 
1.  Brown beef and onions in non-stick skillet.

2.  Add drained canned tomatoes and boullion cubes. Simmer until cooked through.

3.  Place desired amount of meat mixture in tortilla, roll, cover with enchilada sauce and top with cheese.

4.  Heat in microwave or oven until cheese is melted. Top with choice of condiments. Can also be assembled & placed in a baking dish ahead & placed in the oven to be served to a group. Can also serve refried beans, Spanish rice, chips & salsa.

Yield: 6-8 servings using large tortillas, 9-10 using small tortillas
