    1 head iceberg lettuce, chopped 1 onion chopped thin Kalamata olives Feta cheese, cubed Parsley, chopped fine Place lettuce in bowl, top with olives, feta, onions and garnish with parsley. Add dressing

Ingredients:

  • Asparagus
  • Mushrooms
  • Red pepper (optional)

Directions:

  1. Cut asparagus into one inch pieces. Slice mushrooms. Slice red pepper if you include it.
  2. Saute in olive oil until lightly browned and asparagus is still somewhat crisp.

The amount you cut and cook will depend on how many you are serving.
