Lemon Chess Pie

Heat oven to 325 degrees

1 Tablespoon flour
1 stick of butter
2 cups of sugar
3 lemons, juice of
4 eggs

The original rule was to cream the butter and sugar till smooth in a bowl.
Add the eggs one at a time and beat well after each egg.
Stir in the flour and lemon juice and mix well.
Pour into unbaked pie shell or small tart shells. Bake for 30 to 40 minutes until golden brown and set.

The contemporary rule is to put the butter and sugar in the food processor and cream, then add the eggs and mix and finally the lemon juice and flour. Pour into pie shell as above.

The second pie is much the same

Chocolate Chess Pie

Heat oven to 350 degrees 

1 Tablespoon flour
1 stick of butter
2 cups of sugar
3 Tablespoons dark cocoa
4 eggs
A dash of vanilla

Cream the butter and the sugar. Add the eggs and beat well. Add the flour and the cocoa and mix thoroughly. Add the vanilla, mix and pour into unbaked pie shell.
