Ingredients

  • 3 tablespoons Olive Oil
  • ½ cup red onion, finely chopped
  • 2 tsp minced garlic
  • 1 1/2 cups fresh baby lima beans
  • 3 cups sweet corn
  • 1 small jar pimentos
  • Salt and freshly milled pepper

 Garnish

  • ¼ cup fresh parsley, chopped
  • 1 tsp Paprika

 

In a large skillet, heat oil over medium-low heat. Add the chopped onion and minced garlic. Sauté for 5 minutes. Add the rest of the ingredients.  Salt and pepper, to taste. Cover and simmer on low heat for 15 to 20 minutes. Garnish with the parsley and paprika.
