This a wonderful twist on traditional pancakes, instead of a sweet and buttery pancake, lets make them savory and perfect for a quick dinner.


Basic pancake recipe

1 1/2 cups all-purpose flour

2 tablespoons sugar- eliminate this ingredient for this recipe

1 teaspoon baking powder

1/2 teaspoon baking soda

pinch of salt

2 eggs

1 1/2 cup buttermilk


Mix above together, minus the sugar and add:


1 cup grated cheese


Set aside the batter and get together the following:


1 cup diced ham

1 cup frozen or canned English peas


1. In a non stick skillet, over medium high heat pour your pancake batter into skillet (I use a little butter or cooking spray to make sure they don"t stick). In the middle of pancake (before you flip them) add a little ham and peas, sprinkle the ham and peas around the pancake to get a little in every bite.
2. Cook till bottom of pancake is brown, 1 or 2 minutes and flip the pancake over. Cook till that side is brown, keep warm till all pancakes are cooked and top with a sour cream and chives.


Note: you can use a variety of vegetables or meats in this recipe, just whatever you and your family likes. You can also use Bisquick or a pre-mixed pancake to make it easier.
