1620 Savoy: Lobster twice baked potato

Lobster twice baked potato

 

Yukon gold baking potato 2

 

Chopped scallion      1/8 cup

Chopped basil            1/8 cup

Cream cheese            5 oz.

Goat cheese                2 oz.

Parmesan                    4oz.

Jalapeno seeded & chopped 1 tbsp.

Steamed lobster meat   8 oz.

Butter                           1 tbsp.

Heavy cream                ¼ cup

 

 

Method;

Bake potato until done & cut in half horizontally

Core out  into mixing  add butter & cream

Whip thoroughly

Add fold in all ingredients except for parmesan

Pipe into potato shell & top grated parmesan

Bake at 375 for 15 min
