Ingredients:
Fairy Tale Eggplant
Cage Free Eggs
Coconut Flour
Grated Parmesan Cheese *optional
Garlic Powder
Salt
Pepper
Parsley
Coconut Oil

1. Wash (add vinegar to the water to remove any dirt or critters ).
2. Peel.
3.Don your chain mail gloves, and cut into fries using your mandolin slicer.
4. Combine all the dry ingredients.
5. Beat some eggs in a separate bowl & add the fries into the bowl to soak for 2 or 3 minutes.
6. Heat the coconut oil in a medium pan.
7. Transfer the fries into the dry ingredient bowl and coat.
8. Toss those bad boys into the pan (in small batches) and brown on both sides.
9. Enjoy and serve with Eden Organics Crushed Tomatoes (marinara sauce).
