4 strips of thick cut uncured bacon

2 shallots

2 cloves of garlic

3 ripe avocados

1 heirloom tomato

1 jalapeño

1 tsp cumin

1 tsp chili powder

3 ripe limes

Chop bacon into small pieces and place in skillet on medium heat, until fat is rendered and bacon is crispy.  Mince garlic and shallots and place in a bowl. Dice tomatoes and jalapeno (remove seeds and veins for a milder guacamole,) Place in bowl as well. Place avocado in bowl and mash up with juice from limes. Add bacon, chili, and cumin, mix well and let sit in refrigerator for half hour before serving.
