Ingredients

Crust

  • 2 tablespoons butter, softened
  • 2 tablespoons finely grated Parmesan cheese

Custard

  • 2 cups half-and-half
  • 2 large eggs
  • 1 tablespoon flour
  • 1/2 teaspoon kosher salt
  • ½ teaspoon white pepper
  • pinch Cayenne pepper

Fillings

  • 1-10 ounce pkg frozen chopped spinach, thawed and drained
  • 8 slices bacon, cooked and crumbled
  • 2-tablespoons fresh chives, chopped
  • ½ cup Provolone cheese, diced
  • ½ cup Swiss cheese, diced

Directions

Preheat oven to 350 degrees F.  Brush pan with the soft butter and sprinkle the grated Parmesan evenly on top.

Whisk the half-and-half, eggs, flour and all seasonings in a large glass measuring cup or bowl. Spread half the filling evenly in the pan, top with about half the cheese and chives; repeat with remaining filling, cheese and chives.  Pour custard mixture over top.

Bake until the quiche is just set in the center, about 40 to 50 minutes. Cool completely on a rack before serving.
