Mix together the sugar with 3 cups water and stir to dissolve to make a syrup. Add the syrup to the lemon juice and top it up with 8 cups water. Marinara
Makes: 8 servings

Ingredients
28 oz can crushed tomatoes
1/2 onion, chopped fine
2 teaspoons dried basil
2 teaspoons garlic, minced
1 teaspoon dried oregano
2 teaspoons salt
1 teaspoon black pepper
1/2 cup dry white wine
1 tablespoon parsley
1 tablespoon dried thyme
2 teaspoons brown sugar

Notes / Directions
Chop onions fine & sauté in 1/4 cup of olive oil on medium high heat for about 5 minutes; stir occasionally so they don't burn

Add garlic & cook 1 minute

Mix all ingredients together and place in a sauce pan
Bring to a slight boil, then simmer for about 30 minutes
Set aside & let cool


Crazy Pizza

Makes: 10 servings
Prep Time: 30 mins
Cook Time: 10 mins

Ingredients
1 Pillsbury thin crust pizza dough
1 bundle (1 lb) spinach (fresh) ( or 1/2lb frozen, cooked), chopped & sauteed
20 pepperoni slices (small ones)
1 lb fresh mushrooms, sliced & sauteed
3/4 lb mozzarella cheese, grated
1 cup marinara sauce
1/2 lb bacon, cooked & chopped
1/4 cup olive oil
1/2 lb Portobello mushrooms, gills removed & sliced

Notes / Directions
Add olive oil to sauté pan on medium heat
Add sliced mushrooms and cook until soft & browned
Set aside to cool
Add chopped spinach to pan with leftover oil from cooking mushrooms and cook until completely wilted; remove pan from stove top and let cool
Follow instructions on Pillsbury thin crust pizza dough or crust will be soft & wet ( not crispy). Bake for 5 min on a large, greased cookie sheet (pre-bake); set aside and let cool for a couple of minutes
Spread marinara over pizza crust
Add pepperoni evenly over crust
Top each pepperoni with a little crumbled bacon
Spread cooked & chopped spinach around pizza
Spread cooked & sliced mushrooms around pizza
Top with grated mozzarella cheese
Bake @ 400 for 12-15 minutes depending on how crispy you like your crust
