Steak patties:

1 pound ground beef

1/2 pound sausage

1 bunch green onions, diced and divided

2 cup fresh mushrooms, diced and divided

1 handful cilantro, diced and divided

1 tablespoon jalapeno, diced

1 egg

1/2 cup bread crumbs

1 tablespoon hot sauce

1/2 teaspoon each of salt, pepper and Cajun seasoning

1. Mix together beef, sausage, half of the green onions, mushrooms and cilantro. Add the jalapeno, egg, hot sauce, salt, pepper and Cajun seasoning. You can adjust the hot sauce and jalapeno to your taste

2..Shape into patties (about 6), cook in skillet till brown on each side, remove from skillet and set aside.

3. Pour off any excess fat in skillet, we are going to use the same skillet to make the gravy in.

Gravy:

2 tablespoons flour

2 tablespoon oil

3 cup beef broth

1/2 cup sour cream

1 teaspoon red pepper flakes

half of the green onions, mushroom and cilantro

1 cup corn

1 cup green peas

1. Add flour and oil to skillet and cook for a minute or two.

2. Pour beef broth in skillet and cook till it starts to boil. Carefully add steak patties to gravy, return to boil, reduce heat to low boil, cover and cook for about 20 minutes.

3 Again remove patties for skillet and set aside.

4. Add sour cream, green onion, mushrooms, peas and corn to skillet. Cook till all is hot, just a minute or two.

5 Top patties with gravy and serve over potatoes, rice or pasta.
