2 pieces of pork (Chops or cut off the loin), about 2 inches thick
1 sausage link, casing removed, ( Andouille, Italian or any good
quality sausage will do)
1/4 cup onion, diced
1/4 cup bell pepper, diced
1/4 cup celery, diced
1/2 cup bread crumbs, stuffing mix or panko will work great for
this recipe.
1/4 teaspoon garlic
1/4 teaspoon Cajun seasoning
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon black pepper
1. Preheat oven to 350. Cut a slit in, lengthwise, in pork to create a pocket.
Rub salt, pepper and paprika on pork and inside the pocket, set aside.
2. In a oven proof skillet, cook the pork, onions, bell pepper and
celery till sausage in brown and crumbly and vegetables are tender, about 5 or
6 minutes. Pour mixture into a bowl and add the
bread crumbs, garlic and Cajun seasoning.
3. Stuff the pork with stuffing mix and in the same skillet, brown
the pork on each side (add olive oil in there isn't enough oil let from sausage
for the pork to cook).
4. Place skillet in oven and continue to cook for 30 to 40 minutes
or until done.
