2 6oz portions of wild msc sockeye salmon

2 cloves of garlic (minced)

Michael Qandah

Whole Foods

 

½ of a small red onion (julienned)

½ of a bell pepper (julienned)

1 small yellow squash (julienned)

1 small zucchini (julienned)

4-6 asparagus stalks (cut in 2"-3" pieces on a bias)

1 lemon (cut in 8 wedges)

½ tsp of thyme

Salt and pepper

Parchment paper

 

Preheat oven to 350 degrees. Season salmon with salt and pepper. Combine the rest of the ingredients and wrap in parchment paper. Place on sheet tray cook for 25 mins.
