Grease a 9 X 13 baking dish and heat oven to 350.


8 sliced of bread, English muffins, rolls or bagels will work

2 baked potatoes,sliced thinly

1 cup cheese, cubed or grated, cream cheese is really good if you have any, I use a combination of smoked gouda and cream cheese in mine.

6 eggs

2 cup milk, (if your feeling decadent substitute half and half)

2 cups sliced mushrooms, sauteed

1 teaspoon salt and pepper, each

2 cups ham diced

1 cup tomatoes, diced or cherry tomatoes, cut in half

pesto sauce, I use the store bought.


In greased baking dish, layer the bread, top with a layer of sliced potatoes, then a layer of mushrooms and top with cheese. In a mixing bowl, beat together the eggs, milk, salt and pepper and pour over other ingredients in baking dish. Bake at 350 for about 30 minutes or until eggs are set. Top with diced ham and tomatoes. Serve with a spoonful of pesto on top.
