1 8 ounce package of hush puppy mix
1/2 cup milk
1/2 cup water
1 egg
1 or 2 tablespoons Jalapeno's, diced
1 tablespoon hot sauce
1/2 teaspoon Cajun seasoning
1 pound fresh fish, use a fish that is good for frying (cod or catfish or my favorites)
1 cup flour
vegetable oil for frying
1. Mix together first 7 ingredients and set aside
2. Pour grease into large skillet or deep fryer, heat to 350 degrees.
3. Cut fish into bite sized pieces and pat dry. Dredge the fish in the flour and dip in the hush puppy batter. Drop the fish into the hot oil and cook 3 or 4 minutes on each side or till golden.
Guacamole Aioli
1 avocado
juice of one lime
1/2 cup mayonnaise
3 ounces cream cheese
salt, pepper and garlic to taste
1/3 cup fresh cilantro, diced
use a whisk or an electric mixer to mix everything together, cover and chill till ready to serve. If you would like an Aioli with a little kick to it, add some diced jalapeno's.
