Blueberry Cream Cheese Stuffed Biscuits
Makes: 8 servings
Prep Time: 10 mins
Cook Time: 14 mins

Ingredients
8 Biscuits (Pillsbury Grands), pressed & rolled thin
8 ounces Cream Cheese, softened
8 teaspoons blueberry preserves
4 tablespoons butter, melted

Notes / Directions
Preheat oven to 375F
Melt butter and set aside in a small bowl
Gently mix the Blueberry Jelly with the softened Cream Cheese (mix until just barely blended) You want it to have a swirl look to the mixture
Then, evenly divide the Blueberry Cream Cheese mixture into 8 portions and set aside
Lightly flour your work surface
Roll biscuits out on floured surface to flatten as thin as you can get without tearing the biscuit
Place one of the Blueberry Cream Cheese portions and spread onto a biscuit covering just half of the biscuit. This should be in a half moon shape and it should not go all the way to the edge; stay inside the biscuit.
Fold the biscuit so that the side without the mixture is on top of the half that has been covered with the mixture.
Using a fork, press down on the edge of the biscuit to crimp the two sides together.
If the biscuit tears, then use your fingers to pinch the biscuit and seal the tear.
Brush the top of each biscuit with melted butter.
Cook according to the directions on the package the biscuits came in.
About 14 minutes @ 375
