Trout Meuniere

Peter Brave: Brave New Restaurant

Ingredients:

1 trout fillet

1/2 cup flour

1 lemon

1 tsp. olive oil

1 tsp. chopped parsley

Salt and pepper to taste

2 Tbs. butter

Heat a large skillet with the olive oil and a touch of butter. Salt and pepper the trout fillet then lightly flour. Saute meat side down for approximately three minutes, then finish for about two minutes on skin side. Remove trout then add juice from 1/2 a lemon, one tablespoon of butter and a teaspoon of chopped parsley. Pour over fish and serve.
