MARSALA POACHED PEARS

Chef Mark Abernathy   Loca Luna and Red Door

 

For 4 to 6 pears

 

Poaching Liquid

1 cup Marsala wine

½ cup orange juice

¼ cup of honey

¼ cup dark brown sugar

¼ tsp ground cinnamon

¼ tsp fresh ground nutmeg

1/8 tsp of ground cloves

The juice of 1 lemon

1 tsp  lemon zest

2 Tablespoons butter

 

Peel 4 - 6 firm, ripe pears,  leaving the stems.

Place the whole pears on their side in the poaching liquid over medium heat, and cover the pan. Cook for 8 minutes, then turn on their other side and cook for 8 minutes more. 

 

Remove the pears carefully by the stem and remove the lid. Simmer for another 15 - 20 minutes to reduce the liquid. After reducing , stir in 2 tablespoons of salted butter.

 

To serve: Warm the pears in the microwave for 10 - 15 seconds. Place a warm pear on a plate or large bowl with a serving of ice cream. Spoon the reduced sauce over the pears and the ice cream. Serve immediately. Mint garnish.
