1 cup milk
1 cup flour
6 eggs
1/4 cup melted butter
dash salt
Preheat oven to 400* and grease your muffin tins
2 cups sugar
1 large lemon, zested and juiced
1 1/2 pints fresh strawberries, hulled and halved

Combine all ingredients in blender and blend until smooth.  Grease your muffin tins and pour in batter.  Place in 400 degree oven for 15 minutes or until golden on top.  Let cool and the tops will sink in.  Top each pancake with Strawberry compote and powdered sugar.

Strawberry Compote

Combine the sugar, lemon zest, and lemon juice in a small saucepan and cook over very low heat for 10 minutes, until the sugar is dissolved. Add the strawberries and continue to cook over very low heat for 20 minutes, until the strawberries release some of their juices and the mixture boils slowly.  Cool and store in refrigerator.
