Empanadas

 

1 pie shell (store bought will work fine, but homemade is preferred)

 

Filling:

1 teaspoon olive oil

1/2 diced onion

1/2 diced bell pepper

Saute onion and pepper in oil until tender, about 3 minutes, then add:

1/4 cup sliced green olives

1/2 cup raisins

1 diced tomato

1 diced and cooked potato

salt, pepper and garlic to taste

1/2 cup beef broth

 

Cook filling until most of the moisture has evaporated and let cool in freezer for a few minutes. Spoon filling into half of the pie shell and fold the other half on top of filling. Crimp the edges so the filling will stay inside the shell. Bake at 375 degrees until crust is brown. This will yield several servings.
