GMA Chicken Challenge

Channel Seven's Katherina Yancy grew up in the kitchen. She says, "I loved being my moms helper and now I cook every day for my family." But she is still learning. She adds, "I Google recipes, and my husband likes to create seasonings for the main course by mixing fruits or vegetables with spices." Katherina says they have fun in the kitchen and make sure not to cook the same meat the same way twice in a month. She won the Chicken Challenge in 2011 with her Arroz con Pollo (Rice and Chicken) dish and hopes to win for the second year in a row.
 
What you will need:
Boneless Chicken Breast
Vegetables like: Onions, bell peppers, cherry tomatoes, mushrooms
A Pinch of Red Cayenne Pepper Ground Spice on each piece of chicken for a kick of flavor and color
A Coating of Roasted Garlic Herb Rub for chicken
Note: Use your choice of chicken seasoning, but a liquid marinade can dry meat and make it tough


Size matters: Cut pieces that are 1- to 2 inches thick
Note: Chicken takes a while to grill, yet dries easily. You can tenderizes it by puncturing it with a fork a few times so it will cook more evenly and thoroughly.


Skewers and how to:

Wood or steel skewers

If the vegetables you choose cook before the chicken is done, put all the vegetables on a separate skewer. (For example, tomatoes will be mushy by the time the chicken is done)

Otherwise, place onions and peppers between the chicken on the skewer. In the last five minutes you can top it off with a cherry tomato or mushroom.


 
On the grill: It will take about 20-minutes on high heat. Turn them every 5-minutes.
OR
In the oven: Put skewers on a roasting rack in a pan so the juices drip and don't make the meat and vegetables soggy. Rotate until fully cooked.


Indian Yogurt Dipping Sauce (Optional)
You will need:
Plain Yogurt
Fresh Mint, chopped
Lemon Juice
Mix to taste and garnish it with a few leafs of mint for presentation


Side Dish Idea: Rice, any flavor
