Soak fresh sweet corn in the shucks in water for 2 hours.

 

After soaking, remove a few of the outer shucks completely. Pull the remaining shucks down (leave them attached) and remove the silks. Make sure there are enough shucks left to completely re-wrap the ear.

 

With the shucks still down, rub the ears with butter. Compound butter works best (see recipe for Herbal Compound Butter). Pull the shucks back up and wrap the ear. Tie the top end with strips of the removed shucks or water soaked twine.

 

To cook, place the damp ears on the grill at low - medium heat. Place them on the cooler side of the grill if you are grilling meat. Turn them periodically.

The shucks will open slightly and chare a bit, that's ok. Cook for about 15 minutes. To serve, pull down the shucks (you can leave them attached or remove them) and rub the ear with more butter. Season to taste.
