2 tablespoons unsalted butter

3 large fresh eggs 

2 tablespoons milk

¼ cup shredded sharp cheddar cheese

2 teaspoons  mixed fresh herbs chopped

    parsley, tarragon, chives

Salt & Ground Pepper

 

Beat eggs & milk. Melt butter in a non-stick skillet. Add eggs and cook until the edges set. Tilt the skillet and lift the edge so eggs run under the edge. Repeat on the other side. Turn the heat to low. When firm add cheese, chopped herbs, salt & pepper. Fold in each side to form omelet. Brush the top with a little butter, sprinkle with shredded cheese and a few more herbs.
