BBQ pork, about 1 or 2 cups, chopped and boneless.
Greens, about 1 cup,cooked and seasoned, you can use Collard, Turnip, Mustard or Spinach.
set pork and greens aside and let cool.
Muffin Mix:
1 box Jiffy cornbread mix
2 eggs
3/4 cup butter, melted
1/2 onion, diced
1/2 cup cottage cheese
1/2 cup grated cheese
mix all of muffin mix together:
In a muffin pan, place your paper muffin cup in holes and spray paper with cooking spray.
Pour cornbread mix into muffin cups, about 1/2 inch high.
Top cornbread mix with 1 or 2 tablespoons greens.
Top greens with 1 or 2 tablespoons chopped pork.
Top Pork with about 1/2 inch of cornbread mix
Top it all with a sprinkling of cheese.
Bake at 400 for about 20 minutes or until brown on top
