Makes: 1 serving
Prep Time: 20 mins
Cook Time: 6 mins

Ingredients
1/2 lb ground beef
1 ciabatta roll, sliced in half (horizontally)
8 slices or more sliced mushrooms, sauté
2 slices peppered bacon, cut in half & cooked
1-2 teaspoons mayo
1-2 teaspoons Dijon mustard
1/4 sweet onions, sliced thin & sautéed in bacon drippings
1-2 teaspoons Smith & Wollensky steak sauce
4 or more slices hot & spicy pickles, drained
2 tablespoons or more Blue Cheese
1-2 slices smoked Gouda cheese

Notes / Directions
Gently mix & form ground beef into patty. Don't over mix or the patty will be tough & dense
Make sure patty is no more than 1/2" thick - recommend less than 1/2"
Use finger to make a dimple in center of patty to prevent burger from rising too much. This will help keep patty thin

For medium rare burger: Grill over medium high heat 3-4 min on each side

For medium burger: grill same temp and increase time to 5 minutes per side

For well done burger: put on grill and flip it sometime tomorrow...

When dressing the burger, I recommend putting all toppings between the 2 cheeses. It really doesn't matter what order because the cheese will act as a binder and hold the burger together.

Note: I do like to put the steak sauce directly on the meat to intensify the beef flavor
