one or two racks of baby back ribs, you can use other types of ribs if you like, I would just increase the cooking time.
Rub for ribs:
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon garlic
2 tablespoon brown sugar
mix all dry ingredients together and rub on ribs (both sides)
Preheat oven to 275;
In a baking dish, or a piece of foil, layer
1 onion, sliced
1 orange, unpeeled and slices
1 cup orange juice
splash of a sour mash whiskey, optional.
Lay ribs on top on oranges and onions, meaty part down
Cover baking dish with foil or if using foil, wrap tight. Place in oven for about 2 hours, longer for cheaper cut of ribs.
Remove for oven and let cool enough to handle. Remove form pan and discard all the juices, oranges and onions.
If you are going to finish these ribs in the oven, use your broiler. Place the ribs back on the empty baking dish or foil and coat with your favorite BBQ sauce. Turn the ribs after a few minutes and coat the other side with BBQ sauce. Broil till sauce starts to bubble and turn dark brown. If you are going to finish off the ribs on your grill, be sure to turn the ribs once and apply the sauce after you have turned them.
