4  5 ounce chicken breast, boneless and skinless

4  slices of soft cheese, I use mozzarella, but cream cheese, goat cheese or Brie would work. Any cheese that melts will work.

 

Cut a small slit in thickest part of chicken breast and stuff cheese in it. You can also put some of your favorite seasoning in with the cheese if you wish.

 

4  slices bacon

Wrap bacon around chicken, be sure to seal the cheese with the bacon. You can use picks to secure the bacon if you wish.

Season chicken wrapped in bacon with salt and pepper.

 

In a skillet saute chicken breast in olive oil, cook for about 5 minutes on each side or until bacon is crisp and chicken is cooked threw. You can finish the chicken off in the oven if you are concerned about the chicken being done.

 

 

Balsamic Date Sauce

 

In the same pan you cooked the chicken in, add:

1/2 cup pitted dates, coarsely chopped

1/3 cup balsamic vinegar

1/3 cup water

salt and pepper to taste

cook down the mixture for about 5 minutes, sauce will start to thicken, spoon over chicken.
