serves 8

1 c. balsamic vinegar
2 T. sugar
1 1/2 t. lemon juice

1 c. mascarpone cheese
1 c. heavy cream
1 t. vanilla extract
4 T. sugar

2 to 21/2  lbs. Arkansas strawberries, stems removed and cut in half

Combine the vinegar, sugar and lemon juice in a small saucepan. Stir over medium heat until the sugar dissolves.  Simmer until the mixture reduces in half and is thick and syrupy, about 10 minutes.  Let cool completely.  This balsamic syrup will keep for a few days.

Mix together mascarpone, heavy cream, vanilla and 4 T. sugar in an electric mixer until soft peaks form.  Chill until ready to assemble the dessert.

Place prepared berries in a large bowl.  Add 4 to 6 tablespoons of sugar, depending upon the sweetness of the berries, and mix gently.  Drizzle berries with1/3 of the balsamic syrup and toss gently.  Let stand for 20 minutes.  Reserve remaining balsamic vinegar for future use.

Place berries in wine glasses or glass bowl.  Top with the mascarpone cream.  Garnish with a sprig of fresh mint.
