Camaron Poblano Asada

Ingredients:
1 1/2 ounces Chimichurri sauce
1 Camaron Poblano
8 oz. Carne Asada, raw weight
3 oz. seasonal vegetables
4 oz. rice
3 corn table tortillas

1. Remove the Carne Asada from refridgerator and place on grill. Cook appx. 1 minute and turn 90 degrees, cook 1 minute.
2. Turn steak over and cook for 1 1/2 minutes. Degree of doneness is medium with an internal temperature of 145 degrees F.
3. While the steak is cooking, remove the Camaron Poblano from the refridgerator and place onto plate. Place into microwave for 2 minutes or until internal temperatuer is 165 degrees F.
4. Remove the Carne Asada from the grill and place onto a clean and sanitized surface.
5. Place the poblano on the asada and roll the asada around the poblano.
6. Ladle Chimichurri sauce over the lower portion of the plate. Place the Camaron Poblano Asada on top of the Chimichurri sauce.
7. Portion rice and veggies on the plate.
8. Serve immediately with three heated corn tortillas.
