10 lamb chops, rinse and pat dry
2 tablespoons olive oil
 
In a large skillet, heat the oil, salt and pepper the chops and brown on each side for 2 to 3 minutes, set aside.
 
In a bowl, mix together the following ingredients:
1/4 cup parmesan cheese
1/4 cup breadcrumbs, I prefer Panko
1 or 2 tablespoon lemon juice
1 teaspoon each of salt and pepper
1 teaspoon garlic
1 tablespoon Italian seasoning
1/4 cup Dijon mustard
lemon zest, I use this sparingly, however if you can be as aggressive as you wish.
 
Spoon you mixture evenly on each pork chop and broil in oven till top starts to brown and lamb reaches 140 degrees. Garnish with parsley or chives.
