Makes: 8 servings Prep Time: 25 mins Cook Time: 10 mins
Ingredients
2 tablespoons cilantro, chopped
4 tilapia filets
1 can green chilies, chopped
1 lime, squeezed
2 tablespoon olive oil
8 flour tortillas, 6"-8" size
1 tomato or red bell pepper, chopped fine
1 papaya, peeled & diced
1 mango, peeled & diced
1/4 cup mayo
1/4 cup sour cream
1 tablespoon creole mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon lemon juice
dash hot sauce
1/2 teaspoon garlic powder
4 tablespoons (1 per filet) Redfish Magic seasoning
Notes / Directions
Make remoulade sauce
Add mayo, sour cream, mustard, Worcestershire sauce, hot sauce (optional),
garlic powder and lemon juice and mix all ingredients together.
Set aside (can be made several days ahead & stored in frig)
Make the Salsa
Peel & dice the Papaya & Mango
Add chopped cilantro, diced green chilies, diced red bell pepper or tomato, and
lime juice
Mix all ingredients together and set aside
Fish
Cut Tilapia in 2 pieces lengthwise - separate the thick piece from the thinner
piece
Sprinkle olive oil on each side of all fish pieces
Sprinkle Redfish Magic on both sides of each piece
Cook in a skillet over medium heat
3 -4 minutes per side on thin pieces
4-5 minutes per side on thicker pieces
Target an internal temperature of 125 F on fish
Making Taco
Place 1-2 tablespoons of Remoulade on each tortilla and spread
Place a portion of each fish on top of remoulade
Top with fruit salsa
Wrap & enjoy
