For the blackening seasoning:


2 T. black pepper

5 T. salt

2 T. cumin

1 T. white pepper

1 T. garlic powder

1 T. onion powder

1 1/2 t. cayenne pepper

3 T. paprika

3 T. ancho chile powder

1 1/2 t. Mexican oregano

1 1/2 t. thyme

 

 
Mix all of the above spices together and store in a cool, dark place for up to 6 months.

 

For the Poblano-Corn Salsa:


Makes 2 cups

2 c. white corn, thawed

1 Poblano chile, roasted, peeled and seeded........fine dice

1/4 small red onion, fine dice

1 T. chopped cilantro

juice of 1 lime

1 1/2 T. honey

1 T. vegetable oil

salt and pepper to taste
