Crust

4 cups All purpose Flour

2 cups powdered sugar

½ T salt

2 cups butter

 

Filling

2 cups packed brown sugar

2 cups light corn syrup

2 cups butter melted

8 eggs

5 cups chopped pecans

½ cup cocoa powder

2 tsp. vanilla extract

 

Combine first four ingredients in mixer, once dough forms, scrape down sides of bowl and let dough come together once more.  Remove from bowl and press into half sheet pan.  Bake crust in 350 degree oven for 15-20 minutes and let cool.

 

Combine first 3 ingredients of filling and bring to a boil.  Remove from heat and let cool for 5 minutes.  Temper eggs into cooked mixture, then add pecans, cocoa and vanilla.  Pour filling into cooled crust and bake at 350 for 30-40 minutes.  Let cool completely and cut into diamond shapes.
