Bruce Foods & Cajun Injector

 

1  7lb can Bruce's Cut Yams

1 cup Orange Juice

1 cup Honey

1/2 tsp salt

2 tsp nutmeg

2 tsp orange zest (grated orange rind)

1/2 cup butter

 

Directions:

Arrange yams in buttered baking pan, deep dish 8x8 or 6x10 inch.

Mix orange juice, honey, salt, nutmeg & orange zest in saucepan over medium heat, stirring frequently. Let boil for 1 minute.

Pour over yams. Dot with butter.

Bake at 375 degrees for 45 minutes or until hot & syrupy.

If yams become dry, add some of the drained syrup from yam can along the inside edge of the baking pan.
