2 C Pecans

1/8 c agave nectar

¼ TBL coconut oil

8 oz deglet dates

 

Combine all ingredients in food processor and thoroughly grind and combine. Shape into 1 oz balls and chill.

 

Ganache

1.25 lb Chocolate pieces (use dark for this recipe)

1 pt heavy cream (soy, coconut creamers can be used as a substitute for the cream).

 

Bring cream to high heat but do not boil.  Pour over chocolate pieces and stir until chocolate is completely melted.  Carefully dip chilled date balls in chocolate, place neatly on serving platter  and put a pinch of pink salt on top.  For a really great show stopper, after dipping balls in chocolate, roll in finely chopped bacon crumbs.  Oh yeah, this is good!!!
