For the walnuts:

24 large walnut or pecan halves 
1/8 c. low sodium soy sauce
1 1/2  T. dark rum
1 T. sesame oil
1 clove garlic, minced
1/2  t. ground ginger
dash of Sriacha sauce  (Rooster sauce)
2 t. brown sugar
tiny pinch of salt 

 

Preheat oven to 350 degrees.
Spread nuts evenly on a cookie sheet.  Combine remaining ingredients except for the salt, in a saucepan.  Heat until sugar is dissolved.  Pour sauce over nuts, making sure to coat them all well.  Bake at 350 degrees for 20 minutes.  Sprinkle lightly with salt and set aside.
** Can be prepared several days in advance.  Store in ziplock or other air tight container.

 

For the Amaretto Cream Cheese:

4 oz cream cheese, room temperature
2 t. amaretto

 

Mix together until smooth.

 

TO ASSEMBLE:

Count out 24 apricots.  Place a dollop of amaretto cream cheese on apricot and top with a teriyaki walnut.  Serve at room temperature.

May be made several hours in advance.
