2 acorn squash, cut in half and seeds removed
In a 350 oven, bake squash (cut side down) in 1 inch of water for 40 minutes. (Use a baking dish that has sides)
4 slices bacon, diced
cook bacon in skillet till almost crispy, add to skillet:
1 onion, diced
1/2 bell pepper, diced
mushroom, optional
1 apple, peeled, cored and diced
cook onion and apple with bacon for about 5 minutes and add:
1 pound ground beef, use a good quality beef, we will not be draining the fat off this dish
cook beef till brown with above mixture, break up beef as it begins to cook
when beef is brown add:
1/4 cup brown sugar
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cinnamon
pinch of nutmeg and cloves
you can use 1 teaspoon of pumpkin pie spice and omit the cinnamon, nutmeg and cloves.
mix all together, remove from heat
To assemble this dish, Remove acorn squash from oven and pour off water, turn squash over and stuff with ground beef mixture. Top each stuffed squash with bread crumbs and return to over. Cook for an additional 15 minutes and serve.
