Viex Carre

 

1 cup    Vegetable oil

1 cup    Flour

1/2 each red and green bell pepper

1/2 each yellow onion

1 each small jalapeño

2 each peeled, seeded, chopped tomato

2 cups milk

2 cups heavy cream

1 clove chopped garlic

2-3 cups favorite cheese

Chopped cilantro

1 tsp ground cumin

Salt and pepper to taste

 

First combine milk, heavy cream and garlic in saucepan and warm. While waiting for this to warm, in another pan combine oil and flour and cook over low flame, while stirring, for 5 minutes.  Then add onions, peppers and cook until soft.  Slowly stir in warm cream mixture making sure there are no lumps.  Stir in cheese and season!
