2        tbl olive oil

1        pkg. (8oz) sliced mushrooms, rinsed

1        tsp minced garlic

1 ½     lbs. bok choy. Rinsed and chopped into approx. 1-inch pieces

2        tsp soy sauce

1        tsp lemon zest

          Salt & pepper to taste

 

 

In a large skillet or wok, heat oil over medium-high heat.  Add mushrooms, shallots and garlic; stir-fry until mushrooms darken, about 5 minutes.  Add bok choy and stir-fry for about 8-10 minutes or until tender.  Drizzle with say sauce, lemon zest , salt and pepper to taste.
