1 pound chicken, I like the thighs, but you can use breasts, cut into bit sized pieces.
1 tablespoon cornstarch
2 tablespoons soy sauce
2 teaspoons sesame oil
mix above together and let marinate for 15 minutes.
 
Meanwhile in a large skillet or wok heat:
1 tablespoon canola oil and add:
1 red onion
2 cloves garlic
1 or 2 tablespoons grated ginger, fresh
cook for a few minutes and add:
 
2 cups sugar snap peas
chicken with marinade
cook till chicken starts to brown, about 5 minutes and add:
 
1 mango, peeled, pitted and chopped
2 tablespoons chili garlic sauce
 
cook until chicken is done and mango become saucy (about another 5 minutes).
serve over rice
