4- 4 oz center cut pork chops 2 cups black beans cooked 5 radishes quartered 1/2 yellow bell pepper diced 1 jalapeño seeded and small diced 4-6 oz goat cheese crumbled 1 tablespoon lime juice 1/4 cup + 1 tablespoon olive oil ¼ cup fresh cilantro chopped Salt and fresh ground black pepper
TO PREPARE THE PORK CHOPS: Salt and pepper the pork chops. In a medium size pan over medium high heat add 1 tablespoon olive oil and cook the chops 3-5minutes each side or until done. Remove from heat and keep warm.
TO PREPARE THE SALAD: In a large bowl mix together the beans, radishes, bell pepper, and jalapeno. In a separate bowl whisk together the remaining olive oil, lime juice and salt and pepper to taste. Toss with the bean mixture and top with the goat cheese and cilantro. Serve as a side with the pork chops.
