Heart Healthy Recipe: Salmon Over Fresh Spinach with Walnuts

SALMON OVER FRESH SPINACH WITH WALNUTS (SERVES 2)

2 – 4-oz salmon filets
¼ cup onion, diced

¼ tsp minced garlic (or one clove chopped)

½ cup walnuts, chopped

2 tbsp walnut oil (or olive oil)

4 hands full of fresh spinach leaves, whole
1 pinch salt

Salt and pepper the salmon to taste. Grill, bake or broil as preferred.
Sauté the onion in oil for one minute over medium heat. Add garlic and walnuts, and sauté for another minute. Add spinach leaves and pinch of salt to skillet, and cook 2-3 minutes while gently stirring with wooden spoon, coating the spinach leaves. Cook until the spinach is slightly softened. Plate the spinach in divided portions and place salmon filet on top. Top with dill yogurt sauce.

DILL YOUGURT SAUCE
2 Tbsp white wine vinegar
1 tsp sugar (or sugar substitute)
½ tsp salt
1 tsp Dijon mustard
2/3 cup plain yogurt
2 tbsp fresh dill, finely chopped
