
COLD QUINOA SALAD
3 cups vegetable stock
1 ½ cups dried quinoa
¼ cup chopped green onion
½ tsp minced garlic
3 tsp chopped pimento
1 tsp salt
1/3 cup olive oil
2/3 cup white balsamic vinegar
In a large saucepan, bring the vegetable stock and quinoa to a boil.
Stir briefly, add onion, garlic
Cover, and simmer until liquid nearly all absorbed by the quinoa (grains will open)
Once cooled on stove, put in serving dish
Add salt, pimento, olive oil and balsamic vinegar, stirring in gently
Serve cold
