Stir Fried Pork

8 ounce package soba noodles, cooked as directed, drain and rinse with cool water.
1 pound pork loin, thinly sliced into longer pieces
2 tablespoons soy sauce
3 garlic gloves mashed and chopped
1 tablespoons ginger, grated
2 teaspoons cornstarch
1 pound snow peas
Mix all of above together
Meanwhile, in hot skillet mix together:
2 tablespoons vegetable oil
Pork mixture
Cook over high heat for 1 or 2 minutes, stirring constantly
Reduce heat and add:
1 cup Chicken broth
3 tablespoons soy sauce
Cook until sauce starts to thicken, about 3 or 4 minutes.
add:
2 carrots, grated
Soba noodles
Toss together and top with toasted slivered almonds
