What better menu choice for the first day of spring? Enjoy this light and fruity springtime salad.

Makes 4 servings

Ingredients:

3 T white wine vinegar
3 T water
1 T honey
1 T extra-virgin olive oil
1/8 tsp salt
1/8 tsp pepper
3 cups quartered strawberries
1 bag (10 oz.) Italian-blend salad greens (about 6 cups)
4 tsp toasted pine nuts

Combine first six ingredients and stir well with a whisk. Combine strawberries and greens. Add vinegar mixture; toss to coat. Sprinkle with nuts.
