Fresh green beans are delicious on their own, but if you like them dressed, here is a low-fat way to create a creamy veggie side dish. This is very low in calories, so have more than one serving!

 

Makes 4 servings

Ingredients:

1 lb green beans, trimmed and cut into 1-inch pieces
3 T reduced-fat mayonnaise
2 1/2 tsp Dijon mustard
1/8 tsp salt

Place beans in a steamer basket and steam over 2 inches of boiling water until tender, 5 to 7 minutes. Whisk mayonnaise, mustard and salt in a medium bowl. Add the beans; toss to coat.
