Because this delicious Indian dish is made with tofu, it's low in fat and full of rich flavor. It tastes great served over quick brown rice.

Makes 4 servings

Ingredients:

1 block firm to extra-firm tofu (about 14 to 16 oz.)
4 tsp olive oil, divided
3/4 tsp salt, divided
1 onion, sliced
3 cloves garlic, minced
1 tsp fresh grated ginger
1 tsp mustard seeds
1 lb baby spinach
1 cup low-fat or nonfat yogurt
1 1/2 tsp curry powder
1/4 tsp cumin

Dice tofu into 1-inch pieces. Heat 2 teaspoons of oil in a large nonstick skillet over medium heat. Add tofu and sprinkle with 1/4 teaspoon of salt. Cook for 6 to 8 minutes, stirring gently every 2 to 3 minutes. Transfer to a plate.

Add the remaining 2 teaspoons of oil to the pan and add onions, garlic, ginger and mustard seeds. Cook until the onion is translucent, about 4 to 5 minutes. Add spinach in small amounts, adding more as it wilts, until it's all in the pan.

Meanwhile, combine the yogurt, curry powder, cumin and remaining salt in a small bowl. Add to the pan along with the tofu and cook until heated through, about 2 minutes.
