While you and your loved ones are preparing to sit down to a Thanksgiving turkey dinner, consider these facts about the humble bird:
Arkansas ranks third behind Minnesota and North Carolina in turkey production. According to Marvin Childress, Director of Arkansas' Poultry Federation, farmers in the state produce 31 million birds each year, translating in to over six hundred million pounds of turkey. While turkey farms are scattered all other the state, most turkey growers reside in northwest Arkansas. Childress says growers refer to the times just before Thanksgiving and Christmas, when most turkeys are taken for processing, as "fresh seasons". Arkansas turkeys are shipped all over the United States.
