Gin Rickey

1 2/3 oz. gin

1 oz. lime juice

Club soda

Pour the gin and lime juice into a highball filled with ice.  Top with soda and stir.  Garnish with a wedge of lime. 

Virgin Fizz

1 oz. lemon or lime juice

Club soda

Pour juice into a highball filled with ice.  Top with soda and stir.  Garnish with a slice of lemon or lime. 

Ernest Hemingway Special

1 ¾ oz. white rum

2/3 oz. grapefruit juice

½ oz. maraschino juice or liqueur

2/3 oz. lime juice

Put all ingredients into a shaker with crushed ice.  Shake.  Strain into an old-fashioned glass filled with ice.  Add a wedge of lime.
